Crack 3 eggs into a liquid measuring cup and note the volume. Transfer to a bowl, add salt, and beat for 1 minute. Measure equal volumes of water and broth, add to the eggs, and whisk in sesame oil until combined.
Strain the mixture into a heatproof dish and place inside a steamer.
Boil water in a steamer. Steam the eggs over high heat for 3 minutes, then turn off the heat and leave covered for 14 minutes.
Garnish with scallions and more sesame oil, then serve!
