Drain the excess liquid from the tofu using a paper towel.
Cut the tofu into 1 inch cubes and add to a large bowl. Toss with 1 tbsp soy sauce, 1 tbsp cornstarch, and 3 tbsp panko breadcrumbs until all pieces are evenly coated.
Add the tofu cubes to the baking tray and bake for 30-35 minutes at 400F until golden brown.
Make the sauce by adding garlic with 1 tbsp vegetable oil in a small saute pan for 2-3 minutes or until lightly browned. Then add in 1/3 c. soy sauce, 3 tbsp honey, 1 tsp rice vinegar, 2 tbsp of water, 2 tsp sesame oil, and mix well.
To thicken the sauce whisk together 1 tbsp cornstarch and another 2 tbsp of water in a bowl and add to the mixture. Heat over low heat for 3-5 minutes or until the sauce bubbles and thickens.
When the tofu is crispy, toss the tofu cubes with the sauce. Serve over rice with steamed broccoli or enjoy as is!
