    Directions:

    • Vegetable Oil 1/4 cup & 1/4 cup
    • Dried Red Chili 10 pieces
    • Thai Chili 2 pieces
    • Ginger 3 tbsp
    • Garlic 4 tbsp
    • Ground Pork 1 1/2 pounds
    • Sichuan Peppercorn 1/2 tsp
    • Spicy Bean Sauce 2 tbsp
    • Chicken Stock 1 cup
    • Cornstarch 1 1/2 tsp
    • Water 1 1/2 tsp
    • Silken Tofu 1 pound
    • Sesame Oil 1/4 tsp
    • Sugar 1/4 tsp
    • Green Onion 1 piece

    • Begin by heating the vegetable oil in a large skillet, then add in the dried red chilis and the Thai chilis. Toast the chilis then set aside.

    • Next add more oil to the pan along with ginger, garlic, and ground pork. Make sure to break up the ground pork as it cooks.

    • When the pork has browned add in Sichuan peppercorns, spicy bean sauce, and chicken stock then bring to a simmer.

    • Add the cornstarch slurry and the toasted chilis to the mixture and stir until thickened.

    • Add in the silken tofu, sesame oil, sugar, and green onions then stir to coat everything in the sauce.

    • Serve over rice with extra green onions for garnish.
