In a bowl, mix fish sauce, brown sugar, ginger, Chinese 5 spice, and black pepper
In a large bowl, place beef chuck in desire size and mix in the seasoning mix from step 1. Cover the bowl and let it marinate for minimum 30 mins
In a pan, add some vegetable oil, and cookl the beef chuck in batches until all sides are seared, and set the beef aside
In the same pan, add in garlic, lemon grass, tomatic, salt, tumeric powderr, water, cinnamon stick, red Thai chilies. Place the beef back back in the pot. Bring to boil, turn down to medium low heat, cover the pot and simmer for 1 hour
Add in carrots and simmer for 15 minutes
Before serving, remove the cinnamon stick fromt the pot. Serve alone or with baguette/ rice
