In a bowl, mix in ginger, onion, cooking wine, mirin, soy sauce, sugar, and water.
Use a fork to poke through the chicken thign. Season with salt & pepper on both sides and place inside the bowl of marinate.
In a pan, add oil with medium high heat, please the chicken thigh with the skin side down first. Flip to the otherside and repeat until the chicken is cooked.
Remove the chicken to the side. Clean out the pan residue. And place the chicke thigh back in the pan, pour in the remaining marinate, cook with medium heat until all the marinate evaoprates
Ready to serve. Eat alone or serve over rice and vegeatble as a complete meal
