    Directions:

    • Pork Belly 1 pound
    • Water 6 cups
    • Ginger 5 slices
    • Star anise 1 piece
    • Shaoxing wine 2 tbsp
    • Green Onions 3 stalks
    • Sichuan peppercorns 2 tsp
    • Red Chili Flakes 2 tbsp
    • Vegetable Oil ⅓ cup
    • Garlic 10 cloves
    • Light Soy Sauce 3½ tbsp
    • Black Vinegar 1 tbsp
    • Sugar 1 tbsp
    • Sesame Oil 1 tsp
    • Sesame Paste 1 tbsp
    • Cucumber 1 piece
    • Toasted Sesame Seeds 1 tbsp

    • In a large pot add the water, pork belly, ginger, star anise, Shaoxing wine, Sichuan peppercorns, and green onions then boil.

    • When the pork belly has cooked remove it from the pot and reserve 2 cups of the cooking liquid.

    • Slice the cooked pork belly.

    • Using a small bowl add in the minced garlic, ginger, green onions, chili flakes, sichuan peppercorns, boiling oil, soy sauce, black vinegar, sugar, sesame oil, sesame paste, reserved cooking liquid, and toasted sesame seeds then mix.

    • Place the cucumber slices in a large bowl then layer the slices of pork on top.

    • Pour the sauce over the pork and cucumbers, then garnish with green onions.
