    TRADITION BILOCHUN GREEN TEA

    Directions:

    • Cooked salmon 1 fillet
    • Cooked short grain rice 1 cup
    • Crispy puffed rice (bubu arare) 1 tsp
    • Shredded nori 1 tsp
    • White sesame seeds 1/2 tsp
    • Wasabi 1/2 tsp
    • Water 1 cup
    • Mirin 1 tsp
    • Soy sauce 1 tsp
    • Salt 1/8 tsp
    • Hon Dashi 2 tsp
    • Green tea 1 bag
    • Green onion 2 stalks
    • Prepare the salmon and rice. Remove the skin and bones from 1 precooked salmon fillet, then flake the salmon into bite-size pieces and set aside. Cook 1 cup of rice, following the instructions on the package.
    • Heat a saucepan on low. Combine water and Hon Dashi until everything dissolves, then steep 1 green tea bag for 2-3 minutes then remove.

    • Add 1 tsp mirin, 1 tsp soy sauce, and ⅛ tsp salt to the saucepan. Bring it to a boil and set aside.

    • For each serving, add 1 cup of cooked rice to a bowl. Top with flaked salmon. Sprinkle 1 teaspoon of bubu arare (or crushed rice crackers), 1 teaspoon shredded nori, ¼ teaspoon toasted white sesame seeds over the top, and 1/2 tsp wasabi.

    • When you‘re ready to eat, pour the hot dashi green tea mixture over the salmon and rice until it's halfway submerged. Garnish with green onions and enjoy!
