Cut off about ⅓ of the strawberry—this pointed piece will be Santa's hat.
Layer the skewer with the strawberry base, a slice of banana, then top with the strawberry "hat." Add black sesame seeds for Santa's eyes.
In a small pot, combine sugar and water over medium heat, stirring until the sugar fully dissolves. Once dissolved, stop stirring and let it simmer for 10–15 minutes until the syrup turns golden brown. Watch closely so it doesn't burn.
To check if it's ready, dip a wooden chopstick into the syrup, then into ice water for 3 seconds. If it hardens and crunches when bitten, it's ready.
Turn off the heat. Dip the assembled fruit into the syrup, then immediately into ice water. Place on a plate and let it set—within 3 minutes, the sugar will harden and won't stick.
Once the sugar has hardened and cooled completely, it's ready to eat!
