Cut the bread into cubes and toast in the oven at 350F for 25 minutes or until golden brown.
While the bread is in the oven prepare the other ingredients. Slice the Chinese sausage, onion, shallots, celery, garlic, parsely, and thyme.
Heat a large pan on medium and cook down the Chinese sausage until the oil renders out. Then remove the Chinese sausage from the pan.
Using the same pan melt the butter and sautee the vegetables until everything has softened.
Season the mixture with salt, soy sauce, and sesame oil.
Next, add in the parsely, thyme, and Chinese sausage. Stir the mixture well and add 1 cup of chicken stock. Let mixture simmer for 5 minutes so that some of the chicken stock reduces.
Place the toasted bread cubes into a large bowl and add the mixture.
In a separate bowl mix together chicken stock and an egg, then pour over the stuffing mixture.
Pour the stuffing mixture into a greased baking dish and bake at 350F for 1 hour.
Remove from the oven and garnish with more parsley and thyme before serving, and enjoy!
