    Directions:

    • Pumpkin 2 cups
    • Sugar 3 tbsp
    • Glutinous rice flour 3 cups
    • Vegetable oil 2 tbsp
    • Sesame seeds 1 tsp

    • Steam a small pumpkin, and scoop out the flesh from the skin into a large mixing bowl.

    • Next add in the glutinous rice flour and sugar to the bowl, then mix well with your hands until a stiff dough begins to form.

    • Take about two tablespoons of the dough and flatten it out into a small pancake shape.

    • In a large nonstick pan add vegetable oil and turn the burner to medium low heat. Then carefully add in the pumpkin rice cakes and cook each side until golden brown. (about 2 minutes per side)

    • After the rice cakes have turned golden brown remove from the pan and serve with sesame seeds for garnish.

    • Let cool before serving, and enjoy!
