    Directions:

    • Raw peanuts (in shell) 1 1/2 lbs
    • Water 8 cups
    • Sea salt 1 tbsp
    • Sichuan peppercorns 1 tbsp
    • Cinnamon sticks 1-2 sticks
    • Bay leaves 3 leaves
    • Star anise 2-3 pods

    • Soak the peanuts in water for about 30 minutes to loosen any dirt on the shells. Wash them thoroughly and drain. Repeat if needed until the water runs clear.

    • Using your thumb and index finger, gently press and crack open the pointier end of each peanut. This allows the brine to penetrate the shells more effectively.

    • Place the peanuts in a medium pot and add 8 cups of water, ensuring they are fully submerged. Stir in 1 tablespoon of sea salt (adjust to taste), 1 tablespoon Sichuan peppercorns, 1-2 cinnamon sticks, 3 bay leaves, and 2-3 star anise pods (use 2 for a milder flavor or 3 for stronger).

    • Bring the pot to a boil, then cover, reduce the heat, and simmer for 45 minutes to 1 hour. This will yield slightly firm peanuts. For softer peanuts, extend the cooking time and taste periodically to reach your desired texture.

    • Turn off the heat and leave the pot covered so the peanuts continue to absorb the briny flavors. Allow them to cool to room temperature. For best results, let the peanuts soak overnight in the refrigerator and enjoy them cold.
