    Directions:

    • Eggs 1 dozen
    • Light soy sauce 4 tbsp
    • Dark soy sauce 2 tbsp
    • Bay leaves 2-3 pieces
    • Sichuan peppercorns 1 tsp
    • Star anise 1-2 pieces
    • Cinnamon stick 1 piece
    • Sugar 2 tsp
    • Salt 1 tsp
    • Black tea 2 tea bags
    • Water 3 cups

    • Mix all marinade ingredients in a small pot. Bring to a boil, then lower the heat and simmer for 10 minutes. Let it cool completely, then remove the tea bags.

    • Boil enough water to cover your eggs. Lower the heat and gently add the eggs using a spoon. (Soft-boiled: 5 minutes, Medium: 7 minutes, or Hard-boiled: 10 minutes)

    • Transfer eggs to a bowl of ice water for 2–3 minutes, or rinse with cold tap water until cool. Then gently crack the shells with a spoon (don’t break the eggs), or peel them if you prefer.

    • Transfer the eggs to a container, then pour in the marinade along with the dry ingredients and marinate overnight for peeled eggs, or 24 hours for cracked “marble” eggs.

    • Peel the eggs and enjoy!
