    Directions:

    • Soy sauce 1/4 cup
    • Sesame oil 3 tbsp
    • Rice vinegar 2 tbsp
    • Brown sugar 1 tbsp
    • Ginger 1 tsp
    • Black pepper 1 tsp
    • Soba noodles (buckwheat noodles) 1 pack
    • Vegetable oil 1 tbsp
    • Green onion 3 stalks
    • Sesame seeds 2 tbsp
    • Seaweed flakes 1/2 cup
    • In a mixing bowl, combine the soy sauce, sesame oil, vinegar, brown sugar, ginger, and pepper. Stir well and set aside.

    • Cook the buckwheat noodles according to the package instructions.

    • Once cooked, rinse them under cold running water until fully cooled. Drain thoroughly and set aside.

    • Heat oil in a wok or skillet over medium heat. Add half of the green onions and sauté for about 30 seconds.

    • Pour in the prepared sauce and bring to a boil. Let it simmer and thicken slightly, about 15 seconds.

    • Add the noodles and the remaining green onions to the pan. Toss everything together until evenly coated.

    • Add in sesame seeds and crumbled seaweed flakes, then mix well.

    • Garnish with more green onion, sesame seeds, crumbled seaweed flakes and enjoy!
